To kick it off, here is a delicious and healthy cucumber salad recipe!
1 large cucumber diced/chopped
1 package of baby tomatoes halved (I used sweet champagne tomatoes)
1/2 diced/chopped red onion
2 tablespoons olive oil
1 lemon (squeezed)
1/4 cup chopped fresh cilantro (or basil!)
salt and pepper to taste
Directions:
Mix all ingredients together in a large bowl, refrigerate, and enjoy!
*I found this recipe on BuzzFeed, but I tweaked it! They added avocados (which looked amazing, but I was worried about them turning brown) and they used Roma tomatoes.
