Whole 30 Approved Egg Muffins

Okay, these are so delicious and so easy (and SO healthy)! 



The fun thing about these muffins is you can add whatever you want! 

For these certain ones, I have the following:

8 eggs (just so I can eat more later)
1/4 cup coconut milk from the can
Handful of fresh cilantro
Pico (I used the fresh made from HEB)
some garlic, salt, pepper, and Cajun seasoning. 

Mix all of the ingredients in a bowl (I used a glass measuring cup so it would be easy to pour into the tins). 
Grease the muffin tins with olive oil, fill halfway with the egg mixture.
Bake at 350 for approx. 20 minutes (you will notice when the egg is cooked by the way it is risen and fluffy).


It's that easy! 





Other ideas to go in them:
Spinach, mushrooms, ground turkey or beef.
Cheese is also great (not whole30 approved)
Also, any milk will work.
