Weekly Whole30 Food Check-in!

Here is what a few of my meals and snacks have looked like this week! Also, today marks over halfway done!

Also, I have some kind of shocking and exciting news... I registered to tryout for the Houston Texans Cheerleaders. I by no means plan on making it past the first round, but I've always wanted to experience a tryout. I don't want to keep it a secret, but at the same time I don't want to make a big deal out of it! I thought I would let you all know, so feel free to root me on or just laugh! Haha! I just want to have fun with it and knock it off my "bucket list." I will be posting some of the things I will do to help get me as ready as possible before March 28th!

Chicken Salad Lettuce Wraps

Okay! Better late at night than never! I HAVE to share this delicious (and Whole30 approved) meal!



Chicken Salad Lettuce Wraps:

What you need for the Chicken Salad:
-2 pounds of boneless, skinless chicken (I used the tenders and I grilled them)
-1/2 cup whole30 friendly mayo (recipe below)
-1/2 cup chopped celery
- 2-3 tbsp lemon juice
- salt, pepper, and Cajun seasoning to taste (...and I added (a lot) more Cajun seasoning than salt and pepper)

-grill the chicken, then pulse in a food processor until you get small shreds. Be careful not to overdue the pulsing... It will turn into paste and that is NOT what you want (ew).

-in a bowl, mix the shredded chicken, celery, lemon juice, and seasonings.

-add in the mayo, stir, and serve! I prefer mine rolled in a lettuce wrap! Yum! 





For the Mayo:
-1 cup light olive oil
-1 large egg at room temperature (important)
-1/2 tsp salt
-1/2 tsp Dijon mustard (optional)
-2 tsp lemon juice


With a food processor, pulse the egg with everything, except for the olive oil, until it is nice and frothy. Next, turn the processor on low, and slowly add about a tablespoon of olive oil at a time. This should take around 2-3 minutes. You don't want to pour it all at once because it won't gain the thickness you want! After, add it to your chicken salad and refrigerate whatever is left over if you would like.

A Challenge You Should Try!

So I recently signed up to take on a challenge at my gym and I'm still going strong!

Okay, I'm doing this crazy thing called the Whole 30 challenge… but that's not it… I'm doing it on top of the Advocare 24 day challenge. Let me state this, I am NOT doing this to lose weight! I am doing it as a cleanse, to gain more energy, tone, and to just enjoy the natural food God has given us! That is why I am doing it! :) 

Some people eat Whole 30 on a daily basis, but it's definitely just a 30 day challenge for me! 

Whole 30 is similar to "Paleo" but in my opinion requires more dedication.

For 30 days, I am not consuming a lot of things that my mind usually craves, but instead I am consuming things my body enjoys and appreciates. 

Here are a few big things I cannot eat on Whole 30:
-Dairy: cheese (yes, cheese), milk (I can have canned coconut milk though!), etc.
-Grains: rice, breads, pasta, etc, any flours
-Legumes: beans, peas, peanuts 

Those are just the few big things that I can't eat right now, but here's a long list of things I can consume: 



Below are pictures of some of the lunches, dinners, and some snacks I've been eating this past week! Tomorrow will be Day 9 of 30! It's insane how great I already feel! Yes, it's tough at times... Like when I go out to eat with friends, but there are lots of alternatives to eat. Or when I'm having cravings... Like, bad. But I know leafy greens will fix that quickly! Also, it helps to do this with someone else. Thankfully, my husband and I are doing it together (and our brother in law is too!).

I'm definitely staying strong and sticking to it! I have gained so much energy, a positive attitude, and a stronger willpower thus far. It's definitely worth trying for 30 days, but I can't wait to enjoy one of my New Years resolutions of eating clean soon after! :)

How I'm Starting Off this New Year

So I've been thinking about what I could possibly write for my first post of the new year, and it has been difficult to say the least. 

It wasn't until I was on my way home last night that it clicked. Of course, my New Years resolution has something to do with health, but that is so typical. 

So typical to where I felt guilty about it this past Sunday at church. The message definitely spoke to me.

I want to change. Change the way I feel towards others. I want God to work through me. I want Him to help me. I want Him to be my motivator. And guess what? He is those things. Those things and way more. I pray to love others more because God loves. Do more for others not to benefit myself, but because God does so much for us. I pray to worship Him more, spread His word, and continue to grow more in love with Him each day. He is my everything and I want everything I do to be for Him. 

That's including health.

God has provided me the ability to do incredible and beneficial things with my body, and I definitely do not want to abuse that. A healthy body has to start from the inside first. As for the outside? God created our bodies differently, but He also created wonderful nutrients to help us stay healthy. I started my blog not for myself, but for others. I pray to use the body and nutrients that God has given me to help out others to love the way they are and/or what they healthily can become. Most importantly, I pray to help others know Him and fall in love with Him more than anything in this world.

I guess this is where I am going to end this scatterbrained post. I have no idea how God is going to use me this year and beyond, but I cannot wait to see what He does. I trust Him with all of me, and I pray that you trust Him too.
