November is Near!

Alrighty, 

I am going to try something new starting in November. I thought I would try sending out an email newsletter! How it will work... if you leave me your email, I will send you a monthly newsletter featuring the following:

1. A healthy recipe (and other health/fitness tips)
2. What's to come on the blog
3. Some sort of motivational spill
4. Fashion/beauty tips
5. Any other randomness you might enjoy :)

Don't worry, I won't be blowing up your inbox. I will simply send you one newsletter at the beginning of each month. If you are interested, please leave your email below! Or feel free to email me at funandsunwithoutthebuns@gmail.com if you don't feel comfortable leaving your email out to the public.

Oh! Before I forget, I put together a yummy and healthy week's worth of a meal plan (and workout idea) for you. I usually buy groceries once a week, so this is a good guide for what to buy to keep you fueled for a week! You can see how to make the wrap under my recipes tab at the top. You can find the pita snack pack under the what's in my lunchbox tab. As for the chili recipe, you might be seeing that recipe in November's newsletter (hint, hint)! :)

What's in My Lunchbox (and my mind for the week)


Okay, so I don't exactly have any recipes for you this evening. It has been a busy weekend! I ventured out to Dallas on Friday and got home yesterday. Last night, Justin and I kicked off our anniversary by celebrating Downtown. Today, Justin and I celebrated some more!

As for a post on the blog, I just wanted to fill you guys in with what I have planned for the week health wise. Since I haven't been eating as well as I'd like, I am starting tomorrow morning. Yes, tomorrow morning. Typically, I would say now, but I just downed half of our cake from our wedding. It was a little freezer burnt, but still good! Ha! 

Alright, tomorrow I am kicking off my little fall detox by eating small meals through out the day. This is what most of the week will look like:

BREAKFAST: Rice cake with natural peanut butter on top / Iced Coffee with sugar free vanilla and heavy whip
AM Snack: Fruit
LUNCH: Wrap! You can find my wrap recipe under my recipes tab at the top!
PM Snack: Kind Bar
DINNER: Grilled Chicken with Broccoli 

And of course, I can't forget WATER! Lots of it!

Let's Get Back At It

Alright,

I've said it before and I will say it again... I am in a workout/healthy eating slump.

Ever since school started back up, I've been super busy with work. With moving into a home, I've been having my mind on that too. Whenever I get home, I just want to crash... and eat. At work, I eat when I'm not teaching. I haven't been active. I've been lazy and pooped when I get home. But I have to say, I am done with these excuses. 

Instead of these excuses, I could be taking 30 minutes out of my day and going for a walk. Let me tell you, I started walking Lily this week and I'm pretty sure the last time I went for a walk was over the summer. Yikes! But, I have to admit that I feel better already and I've only been walking for a mile these past three days.

That's just it though, I have to get back in the hang of it all slowly! If you go full throttle, then it usually backfires and makes you ten times more tired and ready to give up.

As for healthy eating, I hate to admit it, but I have been eating like crap. Not exactly tons of fried foods (still guilty though), but I've been devouring sweets. It's pretty disgusting actually. Just imagine a dog feasting on scraps. Yeah, that bad. 

Ironically, tonight Justin walked in and said, "I think I'm going to give up sweets and only eat them on a holiday or special occasions." I thought to myself, do Fridays count as special occasions? But really, I told him I thought that was a great idea and I'm going to do the same!

It's so bad, I know how horrible some of the foods are that I have been eating, but why do I continue to eat them? I feel like total poop and my face breaks out like a mad house.

I've come to the realization that my mind speaks over my stomach 80% of the time. 

Nobody is perfect though, and it's definitely okay to indulge every now and then, but my now and then's are becoming daily.

So it's time to get back at it.

I am writing this to prove that I can do it! Not because I want to look good, but because I want to feel good again. I want to have that energy and positivity back! 

I will continue to walk Lily after work each day. I know she enjoys it too.
I will start drinking half of my body weight in ounces of water again. Time to flush the evils out. Water cures everything.
I will not have sweets... except on holidays and special occasions.

Boom. Easier said than done, but nothing is impossible. :) I know how good being healthy feels. I just need to stop acting and start doing! 

I know this post was pretty much just me spilling my feelings, but maybe some of you are in the same rut. I promise you can do it! We can do it! And I promise you will thank yourself later. Start now. Not tomorrow. But don't beat yourself up over it, take it slow.

Aztec Please!

Hey Y'all! 

Okay, so I have to share this beautiful Aztec dress from Shoot the Moon LA with you ASAP! It is seriously one of my favorite dresses in my closet!








Below is how I styled it:

Everything about this dress is an eye opener! And it's so stinkin' comfortable! I recently wore it to a wedding, so I know it is easy to move in (I prefer dancing… a lot). Also, I can wear this teaching. It is so versatile! I really recommend this dress to you! The brand is Everly, and if you know Everly, you know it is a great brand! Shoot the Moon does a wonderful job with their clothing and customer service! Such a great shop!

Deliciously, Guilt-free(ish) Chocolate Chip Cookies


Okay, so sometimes I have a really bad craving for chocolate chip cookies…


Tonight I am sharing with you a somewhat less guilty version of homemade chocolate chip cookies. 

Let me inform you first, they still contain butter… 

BUT! Next week, I will be sharing with you another cookie recipe without flour AND butter! Be sure to stay tuned for that! But in the meantime, enjoy this delightfully delicious recipe.

Here's what you'll need:

- 3/4 cup unsalted butter, softened
- 3/4 cup organic brown sugar
- 1/4 cup coconut sugar
- 1 egg
- 2 tsp. all natural vanilla extract
- 2 cup whole wheat flour
- 2 tsp. cornstarch
- 1tsp. baking soda
- 1/2 tsp. salt (I use pink salt!)
- 1 cup dark chocolate chips



Directions:

First, preheat the oven to 350 F.

Second, cream together butter and sugars until fluffy. Add egg and vanilla. Blend.




Third, add the flour, cornstarch, baking soda, and salt. Then, STIR in the chocolate chips. 






Fourth, on a prepared baking sheet, place tablespoon size scoops of the dough about 2 inches apart. Bake for 8-10 minutes, or until barely golden brown around the edges. Be sure to not cook longer than 10 minutes.


Lastly, let cool and enjoy! :)
