What's in My Lunchbox?

Annnnd I'm back! We are settling in nicely in our new home! I'm sure I will be posting some of the pictures on my blog when things are looking a bit more organized and decorated. It's definitely a work in progress.

In the meantime, I've got a yummy (and healthier) chicken fried rice recipe for you tonight!

Here's what you'll need:

-2 cups cooked brown rice
-3 tbsp low sodium soy sauce or Braggs amino acids
-any veggies you want (I used green onions and carrots)
-2 cloves minced garlic
-4 egg whites (I use the liquid kind in the carton)
-2 boneless skinless chicken breasts
-cooking spray

Best way to make fluffy brown rice...

Add 1 cup of uncooked rice to 2 cups of water. Add a little bit of salt to taste. Bring water to a boil. Reduce heat, cover, and simmer for 50 minutes! Do not remove the lid until time is done! Let sit. (Typically, I make double of what this says! I love rice...)

After the rice is done, let it cool and begin the next steps:

Spray pan. Cook the egg whites and put aside on a plate for now.

Then, recoat the pan with cooking spray (off heat), and sauté the veggies with the garlic for about two minutes.

After that, add the chicken. Cook until lightly browned (and the inside cooked completely).

Lastly, add the egg whites, rice, and soy sauce! Mix.

YUM! One of my fave dishes!
