What's in My Lunchbox?

Annnnd I'm back! We are settling in nicely in our new home! I'm sure I will be posting some of the pictures on my blog when things are looking a bit more organized and decorated. It's definitely a work in progress.

In the meantime, I've got a yummy (and healthier) chicken fried rice recipe for you tonight!

Here's what you'll need:

-2 cups cooked brown rice
-3 tbsp low sodium soy sauce or Braggs amino acids
-any veggies you want (I used green onions and carrots)
-2 cloves minced garlic
-4 egg whites (I use the liquid kind in the carton)
-2 boneless skinless chicken breasts
-cooking spray


Best way to make fluffy brown rice...

Add 1 cup of uncooked rice to 2 cups of water. Add a little bit of salt to taste. Bring water to a boil. Reduce heat, cover, and simmer for 50 minutes! Do not remove the lid until time is done! Let sit. (Typically, I make double of what this says! I love rice...)

After the rice is done, let it cool and begin the next steps:

Spray pan. Cook the egg whites and put aside on a plate for now.


Then, recoat the pan with cooking spray (off heat), and sauté the veggies with the garlic for about two minutes.

After that, add the chicken. Cook until lightly browned (and the inside cooked completely).


Lastly, add the egg whites, rice, and soy sauce! Mix.


YUM! One of my fave dishes!

Craving Sugar?

Happy Wednesday y'all! 

Anyone else craving something sweet?

Well, before you dive into that Blue Bell, think about substituting for one of these yummy, healthier treats!

Keep in mind that the woman's body only needs a max amount of 20 -25 grams (up to 6 teaspoons) of sugar!



We need sugar for energy, but try and stick to natural sugars for the best benefits.

Here's my list of a few healthier dessert options:

-Fruit (the good ole natural sugar intake)
-Dark Chocolate (the higher percentage, the better (and more bitter))
-Vanilla (or Plain with some honey added) Greek Yogurt (I like to add dark chocolate chips and/or coconut)
-Protein Milk Shake (found under my recipes)

*Try and stay away from artificial sugars, foods with high fructose corn syrup, and foods that you can't pronounce the ingredients!*

What's in My Lunchbox?: Healthier Mac and Cheese!

Hey y'all! I hope you enjoyed your weekend as much as I did! The weather was FANTASTIC! It finally felt like Fall!

As for what's in my lunchbox this week? I will be making some chicken fried rice, hardboiled eggs, fruits, and veggies. But, I won't be able to post the fried rice recipe until next week, unfortunately. Justin and I will be having our first walkthrough of our house tomorrow, so we cannot be at school and we thought we'd go grocery shopping tomorrow evening. We move in on the 22nd! Yay!

Since it is Sunday, I wanted to be sure to post, so I thought I would share an easy and healthy macaroni and cheese recipe. 

It only takes about 15 minutes to make!

Here's what you will need:

-8 oz. pasta of choice
-8 oz. (2 cups) of sharp cheddar cheese …(I used a blend of cheeses, but I like sharp cheddar the best!)
-1/2 cup plain greek yogurt
-1/4 teaspoon of garlic powder
-1/4 teaspoon of cajun seasoning of choice OR onion powder
-salt/pepper to taste




Directions:


1. Boil the pasta according to package.
2. Drain BUT be sure to save 1/2 cup of the pasta water and put it to the side.
3. Pour pasta back into pot, stir in cheese and 1/4 of the pasta water.
4. When it is melted, mix in the greek yogurt.
5. Add spices, garlic, salt, and pepper.
6. Feel free to add more of the pasta water if it is too thick.
6. Serve right after and enjoy!

*I personally think it tastes even better the next day! :)

Oh! And before I forget. I started reading a book that I cannot seem to put down! It's called Eightysixed. If you are 20 something year old, Lauren Conrad book lover like me (yes, guilty), a Sex and the City watcher like many of my friends are, or even enjoy the 50 Shades books (I'm not afraid to admit that I'm too innocent for them from what I hear!), then I am sure you will enjoy this book! It's a best seller AND the author is a true inspiration!

Ch-Ch-Ch-Chia!

Happy Halfway Through the Week!

Tonight I am letting you know some great info about chia seeds!

Let me start by saying this..... EAT THEM! They have awesome benefits and they are delicious with other foods!

What is a chia seed?

Chia seeds are edible seeds that actually come from the same plant as the Chia Pet, Salvia hispanica. They are unprocessed, whole-grain, and can be absorbed by the body (unlike flax seeds). They have a mildly nutty flavor which makes them perfect for pairing with foods and drinks. 

What are the benefits?

Supposedly, some say that chia seeds can aid in weight loss. How? These little boogers can help you feel full. Researchers are still looking into this, but studies do show beneficial heart effect from chia seeds.

2 tablespoons of chia seeds: 140 calories, 4 grams of protein, 9 grams of fat, 12 grams of carbs, 11 grams of fiber, and some vitamins and minerals.

Annnnnd this is a recipe from my teacher-friend, Vanessa! She was so nice and brought them to our team, and they were SO good! Energy BITES!:

[1 cup rolled oats, 1/3 cup honey, 1/4 cup chocolate chips, 1 cup peanut butter, 2 tbsp chia seeds]

Where can I find chia seeds?

I buy mine in bulk at HEB! But I know they sell them at most grocery stores.

I personally love chia seeds in my breakfast smoothies! (half of a banana, vanilla protein, 1 cup of 1% milk, up to 2 tbs chia seeds, 1/3 cup fresh baby spinach leaves, 4-6 strawberries, 4-5 ice cubes)

What's in My Lunchbox?

Hey y'all!

Okay, so I'd say I'm a decent clean eater.

Clean eating is based on eating fresh foods and less processed foods.

But of course I still can't seem to stray away from processed foods. So, I thought I would post some healthier processed food options for you to snack on and pack for lunch!

Below are some of the only processed foods I like to snack on and feel less guilty snacking on:

Fashion Friday

Happy Friday everyone!

Today I am so excited to show you this cute maxi dress from SHOPBELLAC

Stress Be Gone!

Okay, lately I have been extremely negative. About EVERYTHING!

But guess what, it's a new month and it's never too late to change.

Don't let your negativity rub off on somebody else, and don't let others' negativity rub off on you.

This gross negativity was provided to me by the one and only, stress. Stress has definitely been bringing me down. I have been feeling like I want to give up. I have been cutting myself down a lot lately. I haven't been the funnest person to be around. Why does stress do this to me?

Well for one, I let it happen. I put a lot of pressure on myself for no reason. I have been letting other things like my job take over my personal life. I've been feeling lonely. I have been questioning my blog even though it's something I seriously enjoy doing. I have been questioning my life! Ahh! And of course, I haven't been staying active or eating as well as I would like to be.

Anyone else feeling as stressed as me? I sure do hope I'm not alone.

If so, there is a solution… but you have to believe in yourself. Your whole self. Not that thought in your mind telling you that you don't have time for anything other than work or other "stuff".

Here are some proven facts about stress:
1. 3/4 of the human population goes through stress.
2. Stress is the main factor of insomnia, or the lack of sleep.
3. Did you know that sugar can increase stress? Also, lots of caffeine, fast food, sodas, alcohol, even butter and cheese can increase stress too!
4. Stress can cause overeating.
5. Stress is interconnected with the most causes of deaths in the United States.

But wait, it gets better! I promise!

How can your healthy lifestyle kick stress to the curb?
1. Eating fresh fruits and veggies can reduce stress!
2. Water can definitely reduce stress. Also, soups and fish can help too.
3. Laughter is a natural remedy to get rid of stress.
4. Chewing gum (sugar free of course!) eases stress.
5. Do not skip meals.
6. Try not to eat just because you are stressed. Going for walk is a good stress reliever!
7. Supposedly, eating hard crunchy foods such as carrots or almonds can eliminate stress.

I know there are a ton more ways to eliminate stress, but these stood out to me the most!

Since it is a new month, I am NOT going to take my body for granted. I am setting some goals. Feel free to join me! :) 


My personal goals:
1. Stay motivated. Don't let the negativity take over.
2. Take more bubble baths. Yep. Relaxing.
3. Smile more! Smiles are contagious.
4. Don't get bummed about the little things.
5. Enjoy life. With others involved too.

Oh! Yeah… fitness goals….

I don't know why I have let these negative feeling take over my body. I know I have a lot on my mind, but if I stay on track healthy wise (which honestly, I haven't been but that's okay!) then I know that I will have more positive vibes and energy!

My fitness goals:
1. Drink half of my body weight in ounces of water.
2. No sugar. EXCEPT natural sugars such as fruit (and some Kind bars).
3. Walk more.
4. Workout at least 3-4 times per week.
5. Make sure I try and eat smaller meals throughout the day.


Okay, so please. Don't let stress get in the way of your life. Pray. Have alone time. Enjoy time with family and friends. Smile. Enjoy the life that God gave you.

What's in My Lunchbox?

Hey y'all! I've got another pesto recipe for you. 

This week I'm having a pesto pasta salad!

Here's what I used:
-1 whole box of whole wheat pasta
-3 spoonfuls of pesto
-2 tablespoons of feta cheese
-1/4 cup chopped red onion
-4 baby carrots 
-1/4 cup chopped broccoli 
-1 chicken breast

My measurements are estimates, so if you want more or less then go right ahead!

Also you can add or leave out any veggies you want!

1. I boiled the box of pasta, drained it, and drizzled it with olive oil.
2. While the pasta was still warm, I added the pesto.

3. I then added the feta, onions, carrots, and broccoli.

4. Lastly, I added the chopped chicken! I have it in the fridge ready to go (I plan on eating it cold)! YUM! Simple and delicious.

I will be pairing this pasta salad with some fruits and veggies on the side. Also, I will be making wraps this week too when I don't have the pasta! If you are looking for a wrap recipe, check out the one I have under the recipes tab!
